If you have a hard time finding the pin bones in a fillet of salmon or other
firm-fleshed fish, place a small dish upside down on the counter and drape
the fillet skin-side down over the back of the dish. As the fish is bent
back a bit over the plate, the bones will pop up and become more visible;
then use tweezers or kitchen pliers to remove them. From The Vineyard
